  • 1 Bowl
  • 1 Sharp knife
  • 1 saucepan

Ingredients
  

  • 1 lb Bulgarian sirene or feta cheese
  • red bell pepper (roasted and peeled)
  • green bell pepper (roasted and peeled)
  • 1 onion (finely chopped)
  • 2-3 cloves garlic or fresh green garlic (minced
  • 5 eggs (beaten)
  • 2 tbsp vegetable oil
  • cup parsley (chopped)
  • ground black pepper to taste
  • salt to taste
  • 2-3 medium tomatoes (peeled and seeded)

Instructions
 

  • Prepare the vegetables by cutting the peppers into small pieces. Wash, peel and remove the seeds from the tomatoes, then chop them into small cubes.
  • Chop the onion and leave a side, then crumbled the white cheese into a bowl.
  • In a large saucepan, over medium heat, add the vegetable oil and the onions and garlic to sauté for a few minutes until the onion became translucent.
  • Add the chopped bell peppers to the saucepan and mix it. Stir well for a few minutes and add the tomatoes. Stir again, cover and let it cook for 8 minutes.
  • Then add the sirene to the pan and stir well. Crack and add the eggs, then stir again. Cook it for a few more minutes and don't forget to stir from time to time.
  • When it is ready remove from the heat, transfer to a plate and add the fresh parsley on top. Enjoy!
