Prepare the vegetables by cutting the peppers into small pieces. Wash, peel and remove the seeds from the tomatoes, then chop them into small cubes.
Chop the onion and leave a side, then crumbled the white cheese into a bowl.
In a large saucepan, over medium heat, add the vegetable oil and the onions and garlic to sauté for a few minutes until the onion became translucent.
Add the chopped bell peppers to the saucepan and mix it. Stir well for a few minutes and add the tomatoes. Stir again, cover and let it cook for 8 minutes.
Then add the sirene to the pan and stir well. Crack and add the eggs, then stir again. Cook it for a few more minutes and don't forget to stir from time to time.
When it is ready remove from the heat, transfer to a plate and add the fresh parsley on top. Enjoy!
