Authentic Bulgarian Lutenitsa Recipe

Made with roasted peppers, tomatoes, onion, this traditional Bulgarian spread is perfect as a dip or condiment.

Ingredients

  • 15 red bell peppers (medium sized)
  • 8-10 tomatoes (ripen well)
  • 1 eggplant (roasted)
  • 2 oz vegetable oil
  • 1 onion
  • 4 carrots (boiled)
  • 1 tbsp salt
  • ½ tbsp sugar

Instructions

  • Make sure you wash all the vegetables. Bake or grill the red bell peppers - you can use also the specially designed for that invention chushkopek. If you bake them preheat the oven to 390℉ and bake them for 1 hour and turn them from each side.
  • Place the baked peppers in a bowl and cover with a lid.
  • Prepare the eggplant and tomatoes by placing them in the baking tray. You can cover the bottom with a baking sheet. Place first the tomatoes and make on top of each tomatoes a small cross with a knife.
  • Place eggplant on top and make a cut on both sides of the eggplant with a knife. Bake them for 1 hour at 390℉.
  • Leave them for a few hours to make easier peeling of the skin.
  • In a blender place all ingredients together and blend well. Transfer the mixture to a large pot.
  • Place the pot over a medium heat and cook for 2 hours. Stir from time to time.
  • When ready you can transfer it into glass jar and place the lid on tight.
