Make sure you wash all the vegetables. Bake or grill the red bell peppers - you can use also the specially designed for that invention chushkopek. If you bake them preheat the oven to 390℉ and bake them for 1 hour and turn them from each side.
Place the baked peppers in a bowl and cover with a lid.
Prepare the eggplant and tomatoes by placing them in the baking tray. You can cover the bottom with a baking sheet. Place first the tomatoes and make on top of each tomatoes a small cross with a knife.
Place eggplant on top and make a cut on both sides of the eggplant with a knife. Bake them for 1 hour at 390℉.
Leave them for a few hours to make easier peeling of the skin.
In a blender place all ingredients together and blend well. Transfer the mixture to a large pot.
Place the pot over a medium heat and cook for 2 hours. Stir from time to time.
When ready you can transfer it into glass jar and place the lid on tight.
