Roasted Red Peppers with Garlic Salad Recipe

Ingredients

  • 6 peppers
  • 2 large garlic cloves (minced)
  • 3 tsp olive oil
  • fresh parsley (chopped)
  • salt
  • tsp vinegar
  • black pepper optional

Instructions

  • You can use a jar with marinated roasted red peppers or roast red peppers in the oven.
  • If you are going to roast red peppers, preheat the oven to 400° F.
  • Cut tops off peppers, slice the peppers lengthwise, and remove any seeds.
  • Place the peppers on a baking sheet with the skin facing up and bake until the skin is slightly charred and blistered.
  • Afterward, move the peppers to a bowl, cover them, and allow them to cool down before handling.
  • Peel the skin from the peppers and cut each pepper into pieces.
  • Add them to a large bowl and mix with the garlic, olive oil, and vinegar. Add salt to taste.
  • Cover the bowl and place in the fridge for a few hours to marinate.
  • Serve with fresh parsley on top.
