Bulgarian Shepherd Salad

Equipment

  • 1 Large Bowl
  • 1 Cutting board

Ingredients

  • 2 medium tomatoes
  • 1 large cucumber
  • 1 red bell pepper (substitute with roasted red peppers)
  • 50 g sweet corn kernels
  • ½ onion
  • 2 hard-boiled eggs
  • 150 g marinated or sautéed mushrooms
  • 150 g Bulgarian white cheese
  • 50 g ham (chopped)
  • 3 tbsp olive oil
  • 2 tbsp vinegar
  • salt and pepper to taste
  • fresh parsley
  • 2-3 olives

Instructions

  • On a large cutting board chop all veggies then transfer them to a large bowl along with the ham.
  • If you are using marinated mushrooms from jar and corn from can, make sure you drain them first. Then transfer to the bowl.
  • Add olive oil, vinegar, salt, pepper and mix well.
  • Transfer to a serving place and grate Bulgarian white cheese on top. Slice and arrange the boiled eggs.
  • Optional add a few stalk fresh parsley and olives on top. Enjoy!
