Bulgarian Harvester Salad Recipe (Zhatvarska Salata)

Equipment

  • 1 Large Bowl
  • 1 Cutting board

Ingredients

  • 1 cucumber 
  • 3 tomato 
  • 4 roasted red bell pepper
  • ½ cup canned corn
  • 1 onion
  • 100 g Bulgarian white cheese or yellow cheese (grated)
  • 4-5 olives (optional)
  • 2 eggs
  • fresh parsley
  • 2-3 tbsp olive oil
  • fresh dill
  • salt

Instructions

  • Cut the cucumber, tomatoes and the roasted red bell pepper and mix with the corn in a large bowl.
  • Slice the onion and add it to the bowl. Mix with salt and olive oil.
  • Transfer to a plate grate the yellow cheese or you can substitute with Bulgarian white cheese.
  • Add the boiled eggs and cut them into quarters.
  • Arrange on top the fresh parsley and add olives. Enjoy!
